The Story of Our Wagyu

At Shin Mura, every cut of beef tells a story — one that begins in the countryside of Miyazaki Prefecture, Japan. Known for its dedication to craftsmanship, this region produces the award-winning A5 Miyazaki Wagyu, graded BMS 12 — the highest level of marbling on the Japanese scale.
What makes Miyazaki Wagyu truly exceptional isn’t just the grade — it’s the experience. As it meets the grill, the fine marbling melts gently into the meat, creating a buttery texture that melts on the tongue. The flavour is clean, rich, and deeply savoury, with a subtle sweetness that lingers — indulgent, yet refined.
Beyond taste, Miyazaki Wagyu is also valued for its higher content of monounsaturated fats and omega-3 and omega-6 fatty acids, which contribute to a smoother mouthfeel and are considered more heart-friendly than other types of fat — a rare balance of luxury and wellness.
